  • 1.5 cups of water (Warm)
  • 1 teaspoon dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 4 cups of flour
  • 7 tablespoons of vegetable oil (for spreading in between layers)
  • 70 grams of butter (for spreading in between layers)
  • Lor cheese (for filling)

Recipe for Bohça Börek

Take warm water in a mixing bowl. Add sugar and yeast, mix well. Add salt, gradually sift in the flour, and knead until you get a soft dough that does not stick to your hands, for about 10 minutes. Cover the dough and let it rest for 15 minutes. Melt the butter, add vegetable oil, mix, and let it cool. Divide the dough into 12 equal pieces, shape them nicely into balls. Roll each piece into a circle the size of a dessert plate, spread oil in between and stack them. Cover and let it rest for 15-20 minutes. Roll out each rested dough on the table, fold two sides inward, then fold the other two sides, place cheese in the middle, fold it like a parcel. Place them on a baking sheet lined with parchment paper with the folded side down. Bake in a preheated oven at 200 degrees Celsius with fan until golden brown. Serve the börek hot. It tastes delicious even when cold.
